I have had the honor and luxury of being prepared countless meals by Satya and each one was prepared with a certain magic innate to his cooking. It's difficult to pinpoint the why or how his dishes are uniquely satisfying but it seems to come from a deep respect he has for flavors and years of experience perfecting how to pair them. His vast knowledge of Indian cuisine mixed with a curiosity for learning how other cultures prepare food has influenced a fusion of creativity in many of his dishes that excite and inspire anyone who has the opportunity to partake in his cooking. He has said many times while guiding me on how to prepare certain dishes that you must "feel" the food, and it's almost as if he can feel what the food needs and adjusts the "recipe" accordingly (I've never seen him follow a recipe). Whatever his magic is, I've never seen it dwindle or run out. And whether he's preparing for one or a group of 40, (with only half a stove, a few pots and pans and a half a day's notice) Satya cooks from the heart and wants little more that to see people enjoy the food he so deeply enjoyed preparing.
